Turkey Taco Tuesday

Tonight I made an oldie (for us) but a goody - turkey tacos. I typically have some late Tuesday p.m. commitments, so my Tuesday evening menus tend to be a little on the fast and easy side.

Most prepared taco seasoning mixes are really high in sodium, which is something I try very hard to keep in check. A few years ago I came across an amazing low-sodium cookbook: "500 Low Sodium Recipes" by Dick Logue. The book is full of easy recipes that are low in sodium, including a simple taco seasoning mix.

Here's the seasoning mix recipe:
  • 2 tsp chili powder
  • 2 tsp all-purpose flour
  • 2 tsp cumin
  • 2 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper (or to taste)
Mix together in a plastic bag and shake until completely mixed. Add to browned ground beef (I used 99 percent lean ground turkey breast) along with approx 3/4c of water and cook until desired consistency.

We then built the tacos to suit our individual tastes. I added fresh avocado and Newman's Own Mild Salsa (which only has 65 mg of sodium for two tbsp) to my 4oz of turkey meat (120 cals), and the boys added shredded cheese (the baby didn't get a taste this time). To wrap the tacos, we had La Tortilla Factory Smart & Delicious Low Carb/High Fiber tortillas - only 50 calories a pop. These wraps are amazing, by the way.

For side dishes, we had Casa Fiesta No Fat Refried Black Beans. I'm sure I could find a way to make these from scratch, but I don't have the time during the week. These beans only have six ingredients, and I can pronounce every single one, so they are a go in my clean eating efforts. One 1/2 c serving is 120 calories, 290 mg sodium and 0g fat. The boys also had Garden of Eatin Unsalted Blue Corn Chips.

Reviews:
While this meal was not entirely homemade, that is not necessarily my goal. My goal is to simply prepare healthy meals with good ingredients. I want the food to be low in sodium, high in flavor. With the exception of the refried beans, this happens to be one of the kid's favorite recipes, so I haven't broken it to him that he won't get another taste of it until next August.
